FAMILY LED SINCE GENERATIONS

Our hotel Birke is over generations in family hands. It is run by Rainer Birke, his wife Jasmine Birke and his son Christian Birke. It has been awarded the 4 star superior business and wellness hotel of the county capital of Schleswig- Holstein in Kiel.

We are members of the Ringhotels, one of the leading private cooperative organizations for family run hotels in Germany with very high standards and individual ambience. The German hotel cooperation works intensively on its partnership with other European family run hotel cooperations in the Benelux countries, Danmark, Italy, Sweden and Switzerland. The values of the traditional local customs and trust are the most important values to the ringhotels who together over generations have accumulated great know how and experience. The motto is family enjoyment.

Eduard Birke

He was born the son of Ferdinand and Anna Birke in Johnnesberg, Braunau in 1907. He completed a bakery and confectionery apprenticeship in Braunau after which he completed waiter training at the Hotel "Zur Post" in Teplice. He had subsequent positions in Lazne, Spindleruv Mlyn, Carlsbad, Göttingen and the Warener court in Waren / Müritz. In 1942 in Waren he married his wife Gertrud. In 1943 and 1949, the two children Renate and Rainer were born.


In 1951 when the Berlin Wall between East and West Germany was built, the two fled with their children to West Germany. In Einbeck in Lower Saxony, they started anew and Edward Birke worked as a waiter in the hotel "Golden Lion". In October 1953 Edward and Gertrude Birke took over the restaurant "Ritzebüttel" in Nortorf. The two made the restaurant a short time a very popular excursion destination and dance hall. Edward Birke engaged great bands from Hamburg to fill the large hall with dance events. In 1957 the lease in Nortorf ran out and they purchased the restaurant Waldesruh in Kiel. This restaurant with beer garden, stables and a large dance hall was a traditional tourist restaurant in Kiel. Dance events, company and family celebrations for up to 500 people took place here. The day of Pentecost were famous . In 1971 he leased the Waldesruh restaurant with beer garden and stables out. In 1973, he opened, the hotel Birke with 13 rooms, right next to the Waldesruh. In 1980 he went into a well-deserved retirement and handed over the hotel to his son Rainer. 

gertrud birke

Wurde am 19.10.1915 geboren. Sie machte eine Ausbildung als Köchin. Im Anschluss arbeitet sie Köchin in unterschiedlichen Betrieben in Süddeutschland und Österreich.

Im Jahr 1942 heiratete Sie in Waren ihren Mann Eduard. Kurze Zeit später übernahmen die beiden dort das Weinhaus Matthiessen 1947. 1943 und 1949 gebar sie ihre beiden Kinder Renate und Rainer in Waren. 1951 als die Mauer zwischen Ost- und Westdeutschland gebaut wurde, flohen die beiden mit Ihren Kindern nach Westdeutschland. In Einbeck in Niedersachsen, starteten die beiden neu und Eduard Birke arbeitet als Kellner im Hotel „Zum goldenen Löwen“. Im Oktober 1953 übernahmen Eduard und Gertrud Birke die Gaststätte „Ritzebüttel“ in Nortorf. Die beiden machten die Gaststätte innerhalb kurzer Zeit zu einem beliebten Ausflugs und Tanzlokal. Gertrud leitet mit viel Leidenschaft die Küche, die über die Grenzen Nortorfs hinaus bekannt für Ihre leckeren Speisen und Torten war. 1957 lief der Pachtvertrag in Nortorf aus und es wurde die Gaststätte Waldesruh, in Kiel gekauft. Diese Gaststätte mit Biergarten, Reitstall und großem Tanzsaal hatte bei den Kielern Tradition als Ausflugslokal. Tanzveranstaltungen und Betriebs- und Familienfeiern bis 500 Personen wurden durchgeführt. Die Pfingstfeste waren berühmt, wie auch die hervorragende regionale Küche deren Leitung Gertrud inne hatte.

Rainer Birke Hotel Birke

Rainer Birke, born in 1949 in Waren/Müritz, absolved after the secondary school the apprenticeship in restaurant management. His business station took him to the Mürren Palace Hotel in Berner Overland (Switzerland), to Le Chalet Hotel in Guernsey (Channel Islands), on the cruise ship TS Hamburg, German Atlantic Line and in the Hotel Winterscheider Mühle in Winterscheid.
From 1972 till 1974 he visited the highest Hotel school in Heidelberg, where he qualified with “an award in hotel management”. until 1978 he was the assistant to the manager, and later on manager from the firm’s hotel- and guest houses of Helmut Wenzel in Kassel, the 3 hotels, 2 Restaurants and the Kassel town hall business.
In 1979 he became the owner and the manager of Hotel Birke, since 1993 also manager from the hotel Prisma management- and management society mbH, Neumünster.

Rainer Birke has 2 children from his 1st wife, Christian and Tina. He has been married since 1995 with his wife Jasmine and has children Louise and Ludwig with her together.

Jasmine Birke

Jasmine Birke, Manager

Jasmine Birke, born 1962 in Hamburg, went after completing her higher education to England for 6 month afterwards she completed a 10 month language study at the University of Sorbonne in Paris. She attended the city foreign language school in Hamburg after which between 1985 and 1987 she completed her apprenticeship as a hotel manager at the Hilton international hotel in Munich.
She worked from 1988 to 1995 for the ACCOR/Mecure; first as assistant manager then in human resources and in sales, finally she was deputy director in the hotel mecure in Bremen where she in 1994 took over the post of director.
After her marriage to Rainer Birke in 1995 she joined the management team of the hotel Birke, the business and wellness hotel in Kiel. The birth of there children Louise and Ludwig followed in 1997 and 1999.

Christian Birke

Christian Birke, Manager

Christian Birke, was born in 1976 in Kassel, he attended after his secondary school in Kiel, from 1993 till 1994 the West Genese Senior High school in New York, where he was award from the State of New York with his diploma. Also he absolved the aprentaship as a hotel manager in the Park hotel Kieler Kaufmann, Kiel, where they took him over.
From 1999 till 2000 he worked after his alternative service at the reception in the palace Elmau- Culture Hideaway and Luxury Spa, Elmau, before he absolved the aprentaship as a public qualified manager (IHK) at the hotel management school in Heidelberg. At the same time he did his master and helped with the completion of the big exhibition in Frankfurt am Main and with the region in Heidelberg.
Since 2002 he has worked in the family hotel Birke. First he was the assistant manager for the F & B (2004 he was also the manager for marketing & sales). Since 2006 Christian Birke has run the Hotel together with Rainer and Jasmine Birke.
In 2009 he founded with other restaurateurs the organization “feinheimisch-(regional exquisities) the taste of Schleswig-Holstein e.V.” where he is a founding member of it. In 2011 he did a apprenticeship to become a Wellnesshotel coach.
