What is the most beautiful of the May? The anticipation for the summer, say one. The others say: The most beautiful are the bridging days! Ascension Day, Pentecost – that is ideal for a short trip. Nothing is more difficult to bear than a line of good days? Here I have to disagree with Goethe: Nothing is easier to bear than a line of good days in the Birke! Our hotel is located in the middle of Schleswig-Holstein, the wonderful country between the seas. In May the yellow rape lures in full bloom under the bright blue sky, and golf players find here a real paradise. The Birke offers you golf fun on 10 partner golf courses which are the most beautiful and most varied courses of Holstein. The nearest one to our hotel is the Golf- & Landclub Gut Uhlenhorst e.V., with its 27 holes. We organise tee time, lesson with a trainer, golf clubs and trolleys. And afterwards you and your muscles can relax in the Birke Day Spa.
Here a new co-host is expecting you. Lisa Mager has been drawn from North Rhine-Westphalia over Hanover to the Kiel coast. “Because I love the water, the shriek of the sea gulls and the beach so much”, admits the 20-year old wellness expert. Her speciality: the Lomi-Lomi massage, a traditional Hawaiian massage form which is in its original form similar to a therapeutic body action than a massage and is entitled not only to treat the body but also the soul. But also for our classics a visit in the Birke Day Spa is worthwhile. The sunbeams entice me to go to our herb garden. There our head chef Pierre Binder and his team are ready to awake everything from the long “winter sleep”. Soon 20 different herbs and spicery come directly from the garden in the pots of the Fischers Fritz. It’s time for it because our dried supply is slowly running out. We have borage and hyssop, also called Josefkraut, which not only is convenient for our fish dishes but also promises a curative effect.
A saying from my childhood comes to my mind: Bis Johanni nicht vergessen: sieben Wochen Spargel essen. You can start with this straight in the restaurant Fischers Fritz. “The king’s vegetable hold court” here. In fact it comes from the region because it tastes best. We get our asparagus from Lindenhof in Preetz. Christoph Donath-Totzke is also a member of Feinheimisch which speaks for the quality of his great asparagus. We also obtain all our other products for the asparagus dishes from farms in Schleswig-Holstein: the potatoes from Hof Schumacher, the Holstein Cottage Ham from Hof Schramm and the wild salmon and other fish come of course from the Baltic Sea. And we are already waiting – like you – that the first Maischolle (May plaice) has the right size.
Fans of Schleswig-Holstein become at least once a year fans of Kiel. In June, when the Kiel Week lures, the biggest Sailing event of the world, which puts the capital from the 19 til 27 June in a colourful and happy mood.
